The red jambalaya is creole and the red comes from the tomato base. Cajun jambalaya is a dark brown and does not use tomato. The brown color comes from the browning of the meats and veggies going in and from the fond that is scraped off the bottom of the pot before adding your liquid and rice.

The dish I had was actually fine. But not what I was expecting so I was appalled at such a travesty!

I may or may not have voiced such an opinion to my table without knowing I was a dumbass.

In all my nearly 52 years, I have never heard anyone refer to jambalaya as simply jam.

I might eat red/creole jambalaya if I'm ever in a retaurant upriver of New Orleans, as in Vacherie or maybe Hymel's in Convent. Otherwise, I prefer the Cajun/country jamabalaya.

And ketchup? Really? Is that REALLY a thing? Dear Lord, have mercy.

I rather a brown jambalaya and will cook it brown 100/100 times anytime anyone besides my wife asks.
My wife grew up in New Orleans so all she ever had was red jambalaya before she met me, so I have to make a red one every once in a while. Apparently I cook it well cause my wife loves it, but I cry a little inside every time the tomatoes go in.

Of all the good LA food, Jambalaya is the most overrated. Ive had the brown ones made by the coonasses who treat the cooking process as religious experience and the red ones they fork out in New Orleans. I prefer the brown, but both are edible and neither are that great.

I can get a dark brown without kitchen bouquet. All you have to do is brown your meats longer. It also helps if you use a cast iron pot.

I’m from bossier the most Cajun place in the world and we only make it with the gratin from the meat in a mangalite pot for the color. Tomato’s go on salads!
