Recipes for tuna steak?

A customer gave me a 3 lb hunk of fresh tuna. I need a good recipe for grilled or seared tuna. Thanks.

Keep the loin whole, marinate for about 30 min in 1/2 soy sauce, 1/2 pineapple juice and a spoonfull of wasbai powder, then roll whole loin in sesame seeds and place on red hot grill fr a minute or 2 on each side until a med rare. then slice and enjoy

i marinate mine in olive oil, soy sauce, black pepper and lime juice. get your skillet hot, put it on there a few minutes on each side.

if it is good and fresh do NOT marinate it. a little bit of olive oil and soy sauce just before you put it on and sear is very hot. don't ruin a good piece of fish putting stuff on it

Tangerine Tuna

4 tuna steaks About 2 pounds total...1/2" thick

MARINADE
1/4 cup soy sauce
1/4 cup tangerine juice, fresh squeesed
3 tablespoons honey
2 tablespoons sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced

FOR FISH
1 tablespoon sesame oil

1.
Mix together all ingredients of marinade in shallow nonreactive pan. Place in tuna steaks and marinade for 10 min. per side.



2. Blot the steaks dry, and brush with oil

3. Place on very hot grill for 1 1/2 minute per side.....Serve at once

And my favorite.......
Margarita Tuna with Avocado Salsa

marinade

2 cups fresh lime juice
1/2 cup fresh lemon juice
1/4 cup triple Sec
1 cup flat mexican dark beer
1/2 cup tequila
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
3/4 cup cilantro, chopped

salsa

2 large avocado, diced
1 medium tomato, diced
1 medium purple onion, diced
1 medium red bell pepper, diced
1 medium jalapeno pepper, diced
1/2 cup cilantro, chopped
1/4 cup 7- up

1. Mix marinade ingredients, marinade tuna for no more than 10 minutes per side (the Citrus acid will cook the fish so do not over cook) cook on grill basting with marinade 3 to 5 min per side.

2. Mix salsa and top fish.

3. I like to serve this with fried tortilla strips

If you have a large charcoal chimney use it to sear the tuna. Light the coals in the chimney, set a small (Weber) grill on top and wait for coals to get hot. Sear your tuna on this (it'll be significantly hotter than your grill).

No marinade
slice it into 1" thick pieces and sear them....45 seconds each side.

Since you have 3lbs you might try a tuna burger with one of the seared pieces. Put ginger mayo, lettuce and tomato on the burger.

And never use olive oil with tuna. It's better with an oil that is either flavor neutral or at least flavor complimentary with a higher flash point.

cut it into cubes, marinate it in vodka for no longer than fie mins in the freezer. Take out of vodka. serve it as a cocktail, (similar to shrimp cocktail) in a bloody mary W/O vodka. Add tuna to the virgin mary just before serving though. Leaving it in the vodka or the virgin mary will over cook it.

Well, my wife has taken over the tuna project, and is cooking it in olive oil, butter, cayanne, kosher salt, and peppercorns. I don't know how it will turn out, but I'll let you know.
