We have a couple Habanero plants and they are producing tons of peppers.
I'm thinking I'll smoke some and grind them for use in barbecue rubs. What are some other uses other than hot sauce ?

Almost every dish we make. Gumbos, soups, tacos, etc. It's a slow heat, not an overwhelming taste.

The abundance is the problem but the real question is....Do you like the flavor? That matters more than the heat.
I love ghost pepper flavor and I make smoked salt to use it year round. Also a simple chow chow or just chop them up and freeze, grab a pinch when you're cooking.

Check out making pepper jelly. I've used habs, jalapenos, Trinidad Scorpion, Ghost peppers, etc. to make jelly with.
Dry them and grate them for pepper flakes. Pickle them. Cut some up and put that in a shaker bottle of vinegar for a bit of extra kick on salads, beans, po-boys, etc.

Habanero honey is amazing. Use it with butter for wings or as a glaze for roasted Brussels sprouts.

The rest I use for a vinegar hot sauce I make. I’m not a big salsa fan, but understand that’s a good use as well.

Make good salsas. Heat about 15 on stove along with half an onion. If green heat up some tomatillos and if red some Roma tomatoes with them. Heat them till a little charred, throw in blender with maybe teaspoon of salt, lime juice of one lime and mix it all up. If orange just heat them up with onion, throw in blender, salt, lime, tad bit of olive oil and mix up.
Woops, don’t forget to add a garlic in there

If you can't come up with ways to use them all, freeze them for a year +.
