PSA: Inside Skirt

If you ever get a skirt steak and it is tough and chewy, it's probably because it is "inside" skirt.

Outside skirt is much, much better. Seems kind of counterintutive, so I thought it bears mentioning. I've seen people looking for inside every once in a while.

yes outer skirt is what all of the places that serve the best fajitas use.

If it says "inside" OR just "skirt steak" without the designation of which side, it's probably inside.

Outside is harder to find because the restaurants snap it up.

This hasn't been answered yet so please, allow me.

Inside vs outside refers to location on the animal. Both skirts come from the short plate, but the outside skirt is the diaphragm muscle that is cut from the outside of the chest wall and the inside skirt is an abdominal muscle cut from inner chest wall.

Further reading:

Outside Skirt is a trimmed, boneless portion of the diaphragm muscle, which is attached at an angle to the ribs on the underside of the short plate.

The Inside Skirt is the trimmed, boneless portion of the transversus abdominus muscle located on the short plate and extends into the flank primal.

Both are inside the chest cavity, but perform different functions which is why one is less tender than the other.

From my time working for a beef producer, in addition to the Mexican food and restaurant demand, a large percentage of the outside skirt meat also gets bought by and exported to Japan. It’s very hard to find at your typical grocery store. Ask at a real butcher shop and it’s probably a special order item even for them

Thanks for the explanation, I always wondered why it was never available in stores.

That said, I still see it occasionally at Publix. Usually it's $25/lb.

Thats insane. Cooked right and it is awesome though. The sirloin flap is a great value though

Sirloin flap is one of the best cuts of beef no one talks about. Tender, flavorful, and super versatile. Makes the best fajitas
