Private chef for a night

Have any of you blokes done the private chef for a night for a group?
We have a family trip coming up in September out west and I thought it might be fun to hire a private chef to come in and cook a meal with appetizers, soups, salads, entrees and a dessert.
I found a guy on the internet that fit the bill and talked to him yesterday. He says he does his chop work, prepping sauces off site and does the cooking, grilling at our AirBNB. Kind of makes sense since he doesn’t know our kitchen and what appliances and stuff are available.
It got me thinking that it sounds more like hiring a caterer than a chef but I could be wrong.
We have a group of 8 and cost is about $200/person plus tip. Close to
$2,000 all in.
Have any of you gentlemen and scoundrels ever used a private chef? Is it worth the $$$? How do I know he’s not buying Costco prepped soups and sauces and giving me the shaft, ( just kidding but who knows).
What says the food and drink board?

Damn, $200 a person? Seems like you could go to a pretty nice place and spend that much or less.

We did it for a TD get together once and it was awesome. 8 courses all small plates...host paid for everyone's meals but we still tipped the chef $100/person. Probably the closest I've been to an OT baller. This was when ZOM was around $0.40.... No idea how you can be sure of where chef is sourcing proteins/ingredients. With how great this stuff looked & tasted, I wouldn't care if he bought it at Walmart.

Chef charles in baton rouge was the cheapest way to do this for years.
You go in to his restaurant, you're the only customers, and he serves you an insane meal.
Idk if he even still operates after his last restaurant closed.

My husband has cooked for private events before, not sure what the going rate is. But anything ‘out west’ is going to be more expensive than you think.

$200/person seems steep to me. The idea seems cool though. I don't see the offsite prep as a bad thing though. That lets him/her come in and start cooking rather than spending an hr+ taking up space in your kitchen and making a mess. For $200/person I'd expect to get a ton of really good food and/or bountiful supply of a paired wine.

The Furloughed Four are pretty close if not slightly higher than $200 a person.

I have done dinners like this for my friends. I might need to charge them next time
