Po Boys

I used to live in NOLA and have eaten many Po Boys, but just curious; how many different Po Boys are there? I'm assuming you could put any kind of meat in there and call it a PO Boy?

Eh more or less. Depends who you talk to. Some will be assholes about it. But I think if you want to call it a poboy, keep it with the traditional. Roast beef debris, and fried shrimp, catfish, and oyster. Fried crawfish tails are good too but not as common.

Far too many variations of po-boys out there.
One of my favorites on French bread was the "Frenchuletta" from Liuzza's on Bienville. Basically a muff on French bread, but a great sandwich.
Breaded Veal Cutlet on French---dressed is my wife's favorite.

Yep. Two of my favorite places to get a good Roast Beef Po-Boy are Parasol's and Rocky & Carlos, but there's tons of other sandwich shops that have great ones too. Franky & Johnny's, Domilese's, Parkway Bakery just to name a few.
At Rocky & Carlos I'm usually torn between the roast beef or their half and half of half shrimp, half oyster dressed and a cold Barq's Root Beer to wash them down.

The wife and I hit R & C about 3 weeks ago and she had the veal cutlet on bun and I had the half & half, both with a Barq's.
We got the obligatory large Mac & Cheese to go and she dug into it at the table.
If I'm in Da' Parish and Rocky & Carlos is open, I always get a Mac & Cheese to take home for the Mrs. Just like if Randazzo's Bakery on Judge Perez near Chalmette High is open, I'm getting a few large chocolate eclairs to take home.

Sometimes if not in the mood for a sloppy roast beef, I'll just order a cold roast beef dressed with extra mayo. That way I'm not wearing gravy or needing 10 napkins to keep my face and hands fairly clean.
One thing I learned long ago------never get a hot roast beef to go and have to drive 15 minutes to get home. By the time you get to eat it, you need a fork.
