Picked, and cooked a bunch of collard greens today

Got out in the garden early this morning and pulled around 75 nice leaves off my collard green plants.
Cooking them is the easiest part after the task of making sure they are nice and clean prior to cutting them to go in the pot.
Of course, as with any green cooked down, I started off with a packed full 4 gallon pot and wound up with less than a gallon of finished product once they were done.
Love me some fresh collards cooked down on a cool day.

I had turnip greens the other day and mustard greens last night. Damn I forget how much I like that.

Mustards will be coming out of the garden this weekend, smothered down with some smoked sausage a bit of sugar and some hot sauce

I have some jalapeno/cheese cornbread left over from last night when we had red beans and rice for dinner.

Had some greens at Emeril's which were cooked with molasses, so when I need sugar in the greens, I've used molasses quite a few times or sometimes, honey. The addition of the molasses is delicious.

A while back, I grew a bunch of broccoli with my special needs students. When we harvested, I taught them about using the stalks for broth, composting the roots, and using the greens for ground cover in the garden.
The janitor came up during this and asked for the greens. He said they are the best greens out there. He could them that weekend at his church BBQ.
OMG they were amazing. I’ve kept and cooked my broccoli greens ever since.

Just about all winter crop greens with large leaves can be cooked down, and that includes broccoli, outer cabbage leaves, Brussel sprout leaves, cauliflower leaves and the more popular collards, kale, Swiss chard, spinach, turnip greens, mustard greens and beet top foliage.

What's a good recipe for this? I tried one a few weeks back with apple cider vinegar, but it added way too much funkiness. Does brown sugar make it too sweet? I think I'd prefer it on the savory side

I am a huge fan of making a Ham Stock and simply cooking the Greens (I add Turnip Roots) in it. Sausage can be added to give it more substance. I agree with the previous post about mixed Greens as well. The best Pot Liquor and don't forget the Cornbread!!!
