SOME brands are not capable of it but many are.
I will add on to the Yoder love, my YS640 has become one of most loved physical possessions.

Another vote of confidence for the Yoder YS 640. You can cook low and slow with plenty of smoke in my opinion (can use tubes and other things to get more smoke if wanted). You can crank it up over 500 degrees as well to sear things. I have a 2 piece diffuser plate so I can remove the door and get direct access to the fire and I sear with GrillGrates. I usually do revere sear and go low at 225 until internal temp hits about 110 then let steak rest while cranking up the temp to 500 and sear for about 2-3 minutes per side until get desired internal temp for wellness.
There are other pellet smokers with similar options with 2 piece diffuser plate and GrillGrates and such. Yoder is expensive but built like a tank and here in America.

This is one of the best features of a pellet grill. They produce perfect thin blue smoke without effort that is the ideal for smoking and have a consistent great smoke flavor.
If you are use to a heavier smoke flavor that edges in some bitterness, it may not be for you.

Ditto in the ys640. Had mine for almost 2 years now and worth every penny. Extremely versatile once you learn how to use it. I'm about to add their new cast iron griddle insert to the mix very soon.
Just put on a couple of racks of spare ribs.

It's also worth noting that Weber is getting ready to come out with a pellet grill in the next month or two. It's similar to the Ironwood and should be in the 1000-1500 starting price range

In my experience that's complete bullshite. If you think you need more smoke get a smoke tube for 15 bucks. I have one but never use it

Completely disagree that pellet grills lack smoke flavor. People who say that are used to dirty smoke. They can keep it

Anyone with any information on Green Mountain Grills? It looks economical. I think the Yoder looks awesome, but it is pretty expensive.

I bought a pit boss 820 today and I'm breaking it in tonight cooking a whole brisket for the LSU game tomorrow. Probably take it off at 12:00 tomorrow and let it rest for a couple hours in a towel and then devour it.

I got a cheap pit boss to check out if I'd like a pellet grill. I've cooked like 4 full briskets, 2 boston butts, about 20 racks of ribs, a few billion hamburgers/hotdogs/chicken breasts. They're amazing. Even the lowly cheap azz pit boss has been great. I got a cover to protect the pellets from moisture even more. I just use the cheap 40# bag of competition pellets from Lowes and it turns out great.
Drawbacks: Not a whole lot of smoke and it doesn't get really hot enough to set a box of chips to let them smoke more.
Pleasant surprise: This grills nicely for hamburgers, etc. I had heard it didn't grill that well but I have had zero problems having quick hamburgers like I always had with gas. I don't even open the little slots for 'grilling'.
Drawbacks: Not a whole lot of smoke and it doesn't get really hot enough to set a box of chips to let them smoke more.
