I like them all but if it is a lazy Saturday, I definitely wouldn't be making waffles because that creates a big mess.

Is there a waffle maker and recipe someone can recommend?
I've made this one before and really liked it. As for waffle makers, look for one that allows you to flip the waffle. Here is an inexpensive one. It has gotten a lot of good reviews.

Pancakes done with a homemade batter. I like them with either blueberries or apple slices cooked down in butter, brown sugar and cinnamon in the batter.
I'm not a big fan of just plain pancakes.

To me, waffles are the LEAST MESSY option of them all. One bowl to mix everything in and all the cooking is contained to the waffle iron that you just wipe out when done (I usually do the trick of just wetting a folded over paper towel and steaming it in the hot waffle iron that I unplug after cooking the last waffle).

I guess it depends on the recipe...the Belgian waffle recipe I posted above requires 3 bowls.
I can make French toast with a fork or whisk, one bowl, spatula and a skillet/griddle.

I've done it using TWO separate bowls, where you separate the eggs and whip the egg whites separately, to fold those in, but never three. I'm not sure what would require three.
This is the one I tend to like best and use most often. I like the corn starch addition to the batter and, of course, just one bowl.
Waffles of Insane Greatness

Appreciate the recipe, Y.A. It does sound a bit less involved. I'll give it a shot the next time I make them.
As for the recipe I linked, they used one bowl for wet ingredients, one for dry ingredients and a third for the egg whites. I suspect that you could get away with using only two bowls by mixing the various wet ingredients in with the dry ingredients one at a time instead of mixing them before adding to the dry ingredients.

making homemade waffles
I am with Alton Brown on waffles at home. They require a specialized countertop implement and thus devoted space, time, and effort. Juice just ain’t worth the squeeze.

I am a pancake person. I like a lot of butter and just a little bit of syrup. Pancakes are best because they can soak up the butter and then just a little syrup on top is all I need. I do enjoy the slight crunch on waffles but the pockets can hold too much syrup. I wouldn’t turn down a waffle, though. Not really a fan of French toast.
For the record, I’ve tried a million pancake recipes and techniques but nothing is better than an IHOP pancake. Sad but true.

I suggest not going Belgian style. Waffle House is not Belgian style, and Belgian waffles are designed to be more desserts (buying waffles in Belgium, they're much sweeter than I would prefer.)
My family that got me addicted to them used Jiffy. Sam's Club pancake mix is also great, there are instructions on it to make it a waffle instead.
Add some vanilla extract. Cook them until they stop steaming, then grab them with a fork. Especially when starting out, go on-demand, don't spend 25 minutes making six waffles to feed three kids. Give each kid a piece of each waffle as they come off.

Hear me out, pancakes, dipped in French toast egg wash, and cooked in a waffle iron...

If you're going to make French Toast, try using Challah (Jewish bread that is twisted and heavy on the egg.) At least at H-E-B, they freeze it and fly it in from New Jersey, although in Houston 3 Brothers and Slow Dough make fantastic bread.

As someone who has reheated leftover dressing from Thanksgiving in a waffle maker I say F it...why not!
