Casamento's was my go-to for classic oyster stew, but it hasn't been as good recently. Anywhere else doing classic prepartion -- whole oysters, heavy cream, onions/scallions, and butter?

Mr B’s usually has it on the holiday menu. Not sure if they have it just yet, but it is fantastic.

For someone that's never had oyster stew before and has no idea what it is supposed to taste like, is this a good representative recipe? One of the largest seafood wholesalers in Bham is located close to me and I can get fresh seafood from them. I'd like to try this soon. Assume serve with fresh French bread?

ETA: Not sure anyone in Bham has this on their menu.

R&O's in Bucktown, but they tend to run out of it.

Had some recently. Very tasty, but lacking in oysters.

I have heard Mandina's oyster and artichoke soup is good.

Not that this will help you, but the absolute best I ever had was at the Fat Canary in Williamsburg.

I have used this recipe as my base and use leeks in it

This reminds me of my normal birthday celebration: a mini sack of oysters from Schaefer & Rusich; eaten raw, fried, charbroiled and in oyster milk stew. I usually don't want to see another oyster for 2 months after that.

I really hope that place isn't sliding downhill. It was a bit erratic last year. I really love their food.

My BiL makes it with a little Worchestershire sauce added. Would love to have a gallon of it now. Wonderful stuff.

This has been a Holiday staple for my family since I was a kid. Absolutely love it. Does anyone else put a small bit of sauerkraut in theirs ?

The recipe in his link is spot-on. Words of advice , don’t brown the onions, just wilt, and don’t burn the garlic. I skip the toasting of the spices and get the half-n-half in there. Then add spices. When you put the oysters in, you are just heating them. The edges curl really quickly and they are done. You want them to “pop” when bitten not be leathery (my biggest complaint about R&O’s is too few oysters and leathery overcooked-great flavor though).
