Fantastic. I used the Emersion blender before adding the potatoes and carrots. Rick and thick stew. I can't wait to see how much better it will be tomorrow for leftovers.

I tell ya. Do yourself a favor and use 2 or 3 beef shanks mixed with a couple oxtail. More meat, and the marrow in the center of that shank just cooks into the stew. The ox tail is a little more troublesome to debone once it's cooked.
Overall, this was an excellent stew.

my wife's step father is from Bangladesh and he makes ox tails quite a bit and does a stew himself but more Indian style with his herbs/spices; I'll see if I can get some of his secrets in case you wanna try it a different way; it's fantastic!

I hit mine with the immersion blender tonight. It's thick enough to almost stand a spoon in! Love it.

Been seeing ox tails in the store lately. May throw a few in the freezer while the getting is good.
You might consider adding some gremolata at the end, like with osso bucco, to brighten it up.

Mine is going now but I sdded short ribs and stew meat while I'm hunting. Braise should be done soon.

Made this again today, but used the stock and tail meat for French Onion soup. Rich, hearty, awesomeness.
