Frying up some shrimp tonight. Want to do some onion rings as well. I usually just soak in buttermilk and hot sauce and then batter with flour and fry.
Anyone else got any good recipes?

get some pancake mix, add a scoop of ice cream, and add a lil water till batter is "wet". you will not be disappointed.

Go to Tom Fitz's site today at nomenu.com and look at his dining diary where he has a pic of some good looking onion rings he had a restaurant. They were soaked in hot sauce and then dusted with flour before being fried. They look pretty tasty.

Cut your rings extra thick. Par boil them (about 2 minutes, maybe a little longer) in crawfish boil.

Batter as normal, fry just a couple minutes less so they don't over cook.

Come back to F&D board and thank Fip.

Slice EXTREMELY thin.

Soak in your mixture, but use pancake mix instead of flour, My pops always used the pancake mix and it turned out great. Aunt Jemima is fine or whatever pancake mix you have.

I don't know how they prepare them at Portico in Mecca, except that they use red onions, but their rings are as good as I've ever tasted.

Double dip them.

Water
Flour
Water
Flour

That's how Mike Anderson's does them and they're some fine onion rings.
