One good thing about the trip to BR this weekend I was able to stop at Kartchner’s (PICS)

As soon as I get home throwing some meat on the smoker

ETA: mini pork roast stuffed with boudin
Undercooked slightly so it can be reheated

I ate the bacon wrapped pork tenderloin stuffed with pepper jack before I took a picture

underrated place -- I find a lot of their products are superior to Billy's across the street

Kartchner's is awesome. I travel from BR to Opelousas often and stop there in Krotz Springs probably 75%+ of the time.

I've stopped in there to pick up sausage and stuffed chickens before. All very good. Yesterday I stopped in for boudin balls. Got the pork and also the jalapeno cream cheese. They were good but next time if I want boudin balls I will just stick with Billy's.

I agree completely. When passing through I get my boudin and wraps from Billy's and everything else from Kartchner's. Best of both worlds.

YES!

For my tastes, the meat in Kartchner's boudin is too chunky to be as fatty as they use. It tastes pretty damned good, but I don't want a giant piece of fat in my boudin.

Their meats, though, are top friggin' notch. My MO when I go through Krotz Springs is to hit Kartchner's to load up on sausage and stuffed meat things for the freezer and go across the highway To Billy's for boudin balls for the ride home and frozen boudin for the freezer.

They also have a cane syrup sausage that's awesome for breakfast. The anduille is real good too. As stated, all the meats are good. I also don't care for the boudin. It's not horrible but plenty of times I've had huge pieces of hard fat in it. They either need to trim the fat better or grind it into smaller pieces.
