For just poyboys and a fried platter?

Bevis
Parkway
Acme is fine, nothing special
Liuzzas
Serios in the quarter off of st Charles
Johnnys in the quarter

Those are my options when I want a poboy in the city

Katies
Liuzzas
R&Os
Mandinas

You can't go wrong with any of these. As others have pointed out, most of what's been posted here is not very good. These four will get you some great poboys, oysters and such along with other NOLA staples.

R&Os has the best seafood gumbo imo, and their roast beef poboy is killer

Mandinas trout almondine is great stuff

Katies does everything well. Their meatball poboys are outstanding, as is their cochon pizza

Liuzzas fried green tomatoes are worth the price of admission

restaurant that’s moderately priced that has Louisiana staples such as poboys, oysters, etc.

I'm not sure what other places not suggested here that you think would better fit the bill?

Check out the Eater New Orleans website! They always have solid suggestions for the latest and greatest restaurants. They also have a monthly map of the hottest restaurants in the city that is pretty comprehensive and map listings for best seafood, hamburgers, poboys, etc.

For the most part, I find their recommendations are pretty spot on and often use them as a guide.

Here is the link for the hottest restaurants in NO for January 2020:

And here is the link to the Best Po-Boy spots that was published summer 2019:
