You don't learn good, eh?

The fact that restaurants are opting for the pop-up model makes clear they believe it's a better option then operating out of St. Roch.

The St Roch market still gets them the exposure they need to be able to switch to a much better financial and logisitical arrangement for those vendors. Once the vendors gain some notoriety and a following, it makes much more sense to move to a pop up or brick & mortar for better facilities and cheaper rent.
