My buddies dad is opening up a muff shop on the corner of congress and perkins. I haven't tried it yet but he is supposedly getting all the ingredients from N.O. They will also be delivering sandwiches as well.

Other than the bread (which needs to be really fresh, so I hope he's getting it daily -- which could be a real challenge), what does that mean?
You just need to import the right meats and cheeses (not from New Orleans) and make a good olive salad (not out of a jar -- not from New Orleans or anywhere else).

I am brainfarting on the name, but a bakery in BR makes a decent French bread which is the same dough. He could save some money by contracting them for bread. Round loaf with sesame seeds, proof, bake.

This right here. It's simple really. Use good salami, ham (or hot capicola) and MORTADELLA with mozzarella and provolone and olive salad. No swiss cheese, no cheap pre-packaged salami and byran ham.
