To cut more time, you can shred or chop up a rotisserie chicken or two. Sam's chickens would work very well since they aren't dry and don't sit under heat for a long time. I'd pour in any of the drippings from those that are in the bottom of the container.
The seasonings and toppings take care of a lot of the flavor and there's nothing that needs to be exact about this recipe.

fish tacos could be done in < 2 hrs. ... lots of recipes on the inet

Red beans and rice.. Cook the red beans in a pressure cooker. From start to finish it takes me about 2 hrs from dry beans.
