re: Need a good cornbread recipe for family trip in two weeks.

Lots of suggestions for Jiffy crap and Mexican cornbread, but if you want a tried and true generations old southern cornbread recipe, here ya go.
1 1/2 Cups yellow cornmeal (not self-rising)
1 Cup Plain white flour (not self rising)
1 egg
1/2 teaspoon salt
1 Tablespoon baking powder
1/4 teaspoon baking soda
1 Tablespoon melted butter (Parkay squeeze works as well)
1 3/4 Cups Buttermilk (Whole not Lowfat)
Mix it together in a large bowl, get the consistency of pancake batter, (adjust cornmeal/buttermilk as necessary to achieve this)then bake in an oiled cast iron skillet @ 400 degrees till golden brown on top.
Simple and damn good.

I have made it with both, and everyone who has had it likes the yellow cornmeal version better.

Ok. People have different tastes. I grow animal feed and human feed and don’t really care which you prefer to feed to your dog or your wife. I make a sale either way.

Why the hate for yellow corn? I like them both, love some Silver Queen, but like the yellow field corn too.
Hell, I grew up eating plain old yeller field corn on the cob and creamed corn that we picked out of my Uncle Monroe's fields and ate fresh/put up in the freezer for winter every year when I was a kid.

Get the best cornmeal you can find. Martha White if nothing else is available, like Adams or Pollard if you can get them.
If you are going to use Jiffy mix, try pouring it out on a greased pizza pan and baking it that way. It only takes about 15 minutes, and the edges get nice and crispy.

So educate me. As an FYI, I am 55, so all the GMO trademark name stuff wasn't prevalent when I was 5-15 years old back in the 70's.
What you are calling sweet corn, I think we would have called yellow/field corn. What you are calling field corn is what I think we called feed corn or silage back then. Which was definitely for feeding cows/hogs/chickens, not humans.
I think we mean the same thing, just have different verbiage.
BTW how old are you, if you don't mind me asking?
And respect for your work as a farmer. My Dad grew up on a dairy farm back in the 30's-40's, so I know it ain't easy.

This is sweet corn.
This is field corn.
Field corn is high in starch and sweet corn has more sugars.
Corn mill is made from field corn. Yellow corn is mainly used for animal feed and ethanol. White field corn is primarily used for human consumption.
Sweet corn is split between white and yellow or even a bicolor which is a mix of the two.

As far as a mix, I enjoy Pioneer yellow. Cast iron skillet heated in the oven, then add bacon grease. When it smokes, add the mix and bake. I don’t care for sweet, but I use it for other dishes where it works.

I always wondered who was buying all that cornbread mix in a box. Everything has to be handed to you now prepackaged. Sugar in cornbread, I would have sworn that was just a yankee concoction. Sad day in the south to hear talk like this. This country is truly lost.

I make a trip to that festival in Cullman, AL every year just to get some fresh milled corn. The best cornmeal and best cornbread ever. I really love the purple/blue corn for cornbread. Amazing.
I have to add a little sugar for my people. They love "corn cake", but I don't make that shite. I put just enough sugar in mine to keep them from bitching too much. About 1/4 cup to a cup of flour and a cup and a half of cornmeal.
