My first ever brisket

Never had the patience to smoke meat. I’ve had a Kamado Joe Classic II for almost two years and figured its time.
I bought an 11# packer. Seasoned with just salt and pepper. Cooked at 240 for 6.5 hrs. Wrapped for 1.5 hours and let rest for another hour. I probably couldn’t do better if I tried a dozen more times.

Thanks guys. I probably watched 25 YouTube videos....mostly Aaron Franklin. I was most worried about keeping my grill at a steady temp and she cooperated very well.
I used KJ lump with hickory chunks. It turned out great.

Yes, it’s JJ George. I have some of their chairs too. I’ve been very pleased with the chairs and table. Not sure what kind of wood he uses.
