Expecting a reply from the New Orleans city limits only crowd, here are the numbers for New Orleans city limits only.

Population (2010): 344,000
Total restaurants: 1210
Non-fast food/chain restaurants (Fitzmorris number): 535
Within city limits, people per restaurant (chains included): 284
Within city limits, people per restaurant (chains not included): 643

Two conclusions:

1) The chain restaurant to local restaurant ratio of the entire New Orleans Metro area is actually lower outside Orleans Parish city limits!

2) The local restaurant market in New Orleans, at 643 people per local restaurant, is unsaturated, based on national numbers, and is probably the reason we have seen an explosion of restaurants post-Katrina and continue to see new restaurants open. The popular opinion that we are at or close to saturation point is based on faulty logic, built on the idea that pre-Katrina NOLA had a high number of local restaurants per person.

I'm never quite clear on what area exactly encompasses "carrollton." Seems to me, at least off the top of my head, there are a hell of a lot more restaurants there then that, in what I would consider that neighborhood.

Because of my great affection for you, Y.A., here are Asheville's numbers:

Population: 425,000
Restaurant #: 1219
People per restaurant: 349

That puts Asheville at #11 on this list, right behind Seattle and ahead of Denver.

Fitzmorris puts many of the restaurants you would associate with Carrollton in his Riverbend neighborhood, which is included in the NOLA restaurant number.

you have to exclude riverbend. my guess is carrolton still has more than that though.

using fitzmorris probably isn't the best borameter. what did he use to get everyone elses numbers? why didn't he use the same thing for NOLA area? doesn't seem consistent enough for me

Fitzmorris is not the best barometer for measuring how many restaurants are in New Orleans. Fitzmorris is, however, the best barometer for measuring the number of restaurants insular New Orleanians, who are quick to defend the culinary culture of NOLA, count as "real" restaurants.

As I said above, Riverbend has most of the restaurants you might think should be within Carrollton but are not listed.

56 for Carrollton/Riverbend is Fitzmorris' number. Does that seem reasonable to you?

Yeah. He's got a weird way of pretending certain places don't even exist.

New orleans has 3878 places listed as restaurants in the phone book, can you re do your graph to include that number?

The TD dining guide has 53 listed in Carrolton/University area...

LINK

it is for places near Carrollton, between expressway and St. Charles...and places between Audubon Park/Tulane and river road.

That number from the phone book is inaccurate, including hundreds of restaurants that no longer exist. Take the 40+ Pizza Huts that recently closed. All are listed by the phonebook. The 3050 number is as accurate as it's going to get. I have personally made sure of that.

shite if I know. Is that the combined listing of those two neighborhoods? What area is he considering just Carrollton?

It's a silly list TulaneLSU made himself. He deliberately included all La. cities.

so where did you pull your population numbers? did you round up or down to the nearest 10,000? where did you pull your restaurant numbers from?

if you are going to give us a statistical analysis, you have to at least tell us the method you pulled your stats, and whether or not that method stayed consistent thorughout

Ninja, oddly enough, is left off the Carrollton/Riverbend list by Fitzmorris, but it is counted in the New Orleans number. Fitzmorris, for whatever reason, lists it as an Uptown restaurant.

All your questions are answered in the first post.
