Made basic meatballs yet they were amazing

I made the most basic meatballs yesterday because my butcher had 20lbs chicken breast and 20lbs ground beef (85/15) for $100. My kids ate them like candy before I could put sauce or noodles on them and my wife who hates beef, for the first time in our marriage could not put my balls down.
I was shocked because they were basic but they are so good. I’m going to grill the rest of them up today on my egg.
Recipe was
3lbs ground beef
1lb ground pork (edited sorry)
1lb mild Italian sausage
2 small onions - key is to grate the onion, not chop
Lots of garlic
Bunch of bread crumbs
Parsley- 2 handfuls
6 eggs
Basil - couple pinches
Romano/Parmesan cheese - couple big handfuls
Salt, pepper, crushed red pepper.
Pan fried a bunch and they were some of the easiest yet best. Simple sometimes is better.

Sounds similar to my recipe but I do a 1 to 1 ratio of ground beef to italian sausage.

Lighten up on the bread crumbs. Add an egg per pound of meat. They will be better. Sear outside in pan allowing middle not to cook, then finish in tomato sauce. Even better yet.

I prefer more breadcrumbs and less egg...panade style. It makes for much lighter, softer texture rather than the too-dense meatballs made without.
