Mad Scientist Says Franklin Brisket is Best Ever

Says he ate there last Spring and it was the best brisket he's ever had anywhere. And then tries to replicate it.

Best I've had recently is at Butter's in the Sinton, TX area

My buddy did Franklin's master class and his first brisket was pretty damn good.

The last time I had Franklin's was in like 2011-2012, and at the time it was the best brisket I've had. Right now, it's still in my top 5, and could be my number 1, it's just that it has been so long since I've had it. There is a reason people wait in line so long for it, but it's always the matter of is waiting for it worth it if you can get slightly worse brisket (but still very good) with no wait.

It's the best brisket I've ever had. I'd never stand in line for it though. When people come visit and want to go out there and wait, I'm all smiles.

Just had Franklin's this past April and it was the best I've ever had. Had Terry Black's on the same trip, and while still really good, I thought Franklin's was clearly superior.

ill back up.... that was a joke for ANYONE who has been around a grill/smoker for 15 mins.

A bit of exaggeration but it was like, "this is charcoal, you put a little bit in a pile. This is a lighter, you use it to light the charcoal."


Not exaggeration, "You take your shaker, hold it at a 45 degree angle. twist you wrist from side to side like 30 degrees"

I've had it several times. It is the best, but there are so many other BBQ joints within minutes that are only marginally not as good as Franklin, that it is not worth the wait. These include:

Mickelthwaite
KG BBQ
Terry Blacks
Blacks
Stiles Switch
LA BBQ
Leroy and Lewis

I feel that good brisket is subjective in taste, like bourbon. Obviously, a brisket cooked by your Uncle Joe for only 5 hours is not in comparison. I am talking about a seasoned pitmaster and his brisket. I've had many briskets from all the top BBQ places. It's hard for me to pinpoint who has the best.

I feel it's not a fair judgment to have the place one time and say it's the best.

yes.... i downloaded it from ipt and laughed. The only thing i "learned" from it was his explanation on how to tend/tune a stick burner firebox. which really is intuitive if you cook on one.

Never had Franklin's and not inspired to rush over and try it. But it's a nice feather in his hat coming from the Mad Scientist.

Franklin has been falling in the TX Top 50 BBQ rankings the last two cycles so maybe he's upped his game.

Yes that's in it and it's cringey but there are other things that are beneficial. But you can probably get all that info from free youtube videos.

Franklin is a known liar about what he does and doesn't do, he has sold in books and published so many versions of his recipe for his restaurant sauce that it is hilarious. He use to preach just S&P, but everyone knows he doesn't just do S&P in the restaurant.

I would be worried about whatever scam he is running with his master class because of this issue with him.

His PBS series was really good, and I feel like he was being honest. He never said there was just one way and tried lots of different things.

Can you share anything that you learned from it? I think my bro did the masterclass too and I only remember him sharing something about the way you stack your wood, but I lost those notes.

ETA: Actually I found it. On a nice bed of coals. Stack two small logs at the bottom, parallel to the air flow, then two small logs on top of that facing the other way, then one big log facing parallel to air flow.
