Get yourself one of those air fryer/pressure cooker combos. Quick, easy, and doesn’t heat up the house. Did a chuck roast in the pressure cooker the other day. Turned out as good or better than Dutch oven.

When you start getting that craving for something fried and crunchy, I highly recommend using pork rinds. Crush them up and bread your chicken or whatever you want to fry. Comes our delicious and crunchy and hits the spot.

Follow Instagram accounts with keto or low carb in the name to get recipes, ideas, and inspiration.

I try to stay away from most low carb cookie, cake, pie, dessert recipes, because I’d rather spend my carbs on my meals. When I’m desperate for something sweet, I slice a few strawberries or blackberries or blueberries, chop a few pecans, and pour a little cream over them. If the berries are not particularly sweet, I might sprinkle some Splenda over it all.

My most basic is baked chicken thighs with a side of buttered broccoli.

Fish in a skillet with asparagus on the side, or an avocado with red onion and sautéed cherry tomatoes.

Brown and season a pound of ground pork (or beef), throw in a bag of shredded cabbage and let that get tender, add soy sauce and finish with sesame oil. AKA Eggroll in a bowl.

Stuffed bell peppers with eggplant dressing without the rice, or rice dressing without the rice, but add cheese and pine nuts.

Boiled or skillet grilled shrimp salads. Add bacon because you can.

Hamburger or cheeseburger salad. I prefer those to lettuce wrapped burgers. Sometimes I make my own burger for the salad, and sometimes I pick up a fast food burger, give the buns to my dogs, and add the burger and the fixings that came with it to my favorite salad greens.

Low carb tortilla pizzas, flatbreads, quesadillas, enchiladas.

Chili without beans.

Smothered okra and tomatoes with shrimp.

When I cook a roast and rice n gravy meal for the fam, they have rice, I have mashed cauliflower and gravy.

Oven roasted cauliflower, broccoli, Brussels sprouts or okra are always delicious sides.

Baked zucchini fries, using Parmesan and or pork panko, or almond flour, or any combination … SO good.

Cauliflower fried rice.

Bacon and Eggs
Chicken Breast
Any green veggie
Mushrooms
Salad topped with any of the proteins above (except maybe the sausage)
Avocados
If you feel like you need fruit then eat Watermelon.
Snack on Dill Pickles or Pork Rinds.

Also we do Zucchini noodles for pastas.
I've tried the cauliflower pastas and rice, but man it gives me the wind something awful.

I do a lot of bowls with cauliflower rice or roast cauliflower. Spaghetti squash for pasta.

Chicken Pot Pie with cauliflower rice and whipped cream cheese instead of the canned soup/sauce. Get the cauli rice with peas and carrots, mix with a roasted chicken and whipped cream cheese (my favorite is the Veggie one). Add a little chicken broth or half & half if it needs to be thinned out. I haven't made that in a long while, but you can use ground beef/taco seasoning, broccoli and cheese, etc. It's a pretty versatile casserole base.

burrito in a bowl is my go to

noodle soup dishes with replacement noodles. lots of options out there now like miracle noodle. i like them, they might take some getting used to for some folks

We like Trader Joe’s heart of palm noodles. I usually make them with a little pesto, feta, cherry tomatoes and fresh spinach. It’s good with either grilled chicken or shrimp.

Most nights I eat a salad and meat. Sometimes air fried brussel sprouts or grilled veggies.
