Louisiana foods for out of state friends

We have a friend coming in for Labor Day weekend and it is their first time into Louisiana.
I need some dish ideas for them to try out, particularly during the LSU game tomorrow. I've already got the main dish covered.
Of course boudin will be available. I'm looking for some creative ideas.
I'll probably go with a jambalaya on Sunday unless somebody has a better idea.

Well, what is it?
Sounds like you're looking for snacky ideas along with the boudin? Gator will only be found at places like Hebert's, but blackened gator with a horseradish sauce is always good.
Fried catfish
Meat pies or crawfish pies
Etouffee is probably fairly impressive to someone who has never had it before, and it is so easy and quick to make
Crab au gratin with toasts for dipping is such a good appetizer, IMO

Maybe gumbo - It is hot as frick outside but if you're inside in the AC, it would be good.
(ETA - I didn't notice at first that you have the main dish covered. Gumbo is kind of a main dish, so maybe not.)
Mini muffulettas - like you can get at Rouse's - These are a good snack.
Crawfish pistolettes (or crawfish pie or crawfish etouffee or something with crawfish).
Meat pies.
Out-of-state people might want alligator. They think we eat that all the time.

I don't care what anyone says, gumbo is good in any weather. Etoufee is a good choice, or fettuccini.

I’m with you on gumbo. But jambalaya is easier & will be more broadly accepted by people not familiar with the food

Crawfish Monica is crazy easy to make. Crawfish bread isn’t difficult either. Seafood pistollettes make for great apps. Mini muffalettas can also work. Boudin is king. Tasso can be used a variety of ways. I used to have a recipe for spicy shrimp deviled eggs. Shrimp and merleton dressing is a great side.

I came here to say boudin but you’ve got that covered. I met a New Orleans transplant who turned me on to a market here where I could find legit andouille sausage and I also picked up some boudin and some pork & alligator sausage. I haven’t tried any of it yet.
What about fried okra? I could probably rock on that. I can find decent etouffee and gumbo. And jambalaya is easy to make. I’ve never had grillades and grits. Do you think that’s too simple? Or courtbouillon. I’d be interested in anything with a sauce piquant. Cajun style BBQ shrimp would probably be cool.
I’d say you shouldn’t overthink it. Find whatever is fresh and cook it the way you would for yourself and you’ll probably be just fine.
But consider the fried okra. I’ll bet that’s easy and I’d probably love it. :)

Oh, man. If I was visiting you and you didn’t serve me any of your homegrown okra then I’d be upset. Maybe even insulted.
I should expand on that. If I was visiting a friend in Louisiana who grew their own okra, I’d expect gumbo with okra in it. Otherwise, when I got home, I’d tell people, “He grows his own okra and didn’t even make gumbo!”
