I just don't buy them if they're not LA and if I'm not willing to pay whatever price is out there.It's the principle. I'm pretty much willing to pay, though, if I really want them. Sorry if I offended you, but it burns me up when local seafood joints sell them from China or Spain or wherever. Sorry about that, but those are my feelings.

The main reason why chinese and spanish crawfish tails have made their way into the U.S. is because we consume more than we produce here. Every year crawfish tails sell out completely and they end up being high at the end of the season all away until mid season. There are only a few months out the year where they are affordable to all people. It's just a case of supply and demand. Hopefully they get really cheap this year.
And I agree we should support local seafood.

For real! They are small and fishy. Here in Tampa area I can find frozen tails from Spain. They are acceptable, but I would buy La if I could find them.

I picked up from Off the Hook and they were domestic processed in Henderson.

tailmeat makes up about 10-20% of the total weight depending on the size

I've heard anywhere from 10-15% which is pretty much in line with what yellowfin said.
So if you bought live crawfish at $2.00 your cost at a 10% yield would be around $18.80/lb assuming a 12.5% yield and 15% shrinkage(and dead ones you have to throw away) loss from boiling. And at $3.00 live price cost would be $28.24/lb. You are way better off buying them already peeled because that is a lot of work.

I'm afraid people should just swear off crawfish dishes completely unless they prep them at home IF they wish to avoid imported crawfish. That product is overwhelmingly used in commercial kitchens and it doesn't matter what time of year it is...simple economics at work.

Reeves has both, and after talking with one of the mngrs, you could tell he didn't like selling the Chinese crap after he relaxed and told me what he really thought of it when I told him I refused to purchase it.
Good for you cubsgrace. How any self respecting Louisianian can make an etoufee with Chinese no fat tough tails is beyond me, but then again I guess it IS better than microwave mac and cheese.
So if that's the standard, then I guess that speaks for itself.

I bought chinese recently because there were no LA tails at winn dixie.

I couldn't disagree with you, more. I'd rather no tails than Chinese tails and I think buying those in LA, is as close to a crime as one can get without being charged. And, that's even if ours are out of season or we're having a bad season. Eat some shrimp.
Plus, have read about the Chinese methods and the water, etc...? I don't know how you can eat those without throwing up.

I agree the LA product is far superior and it is all I will buy, I also believe in supporting local business, I just wish that the crawfish farmers would use mercury outboards and drive ford trucks instead of the yamahas and toyotas

"Treason" is a good word. I wanted to stop going to the grocery stores who sell the stuff, but they all do, and I have to buy food.

What if that local joint sold both imports and local?
Some customers don't care where their crawfish tails come from and request crawfish tails even if they are imports. As a business owner, you need to give your customers what they want and also need to provide products that make you money. I think those grocery stores carry them because they make money on them also. If you don't have what the customers want they will go elsewhere. Business owners still have bills to pay. Just something to think about.

I believe the Mercury outboards are made in China as well. But one thing I know for certain. The crawfish here are from here. That I know, as are the crawfish farmers.

I am not sure, if they are then you got me, but my point is that I prefer the LA product and will pay for it, but it aggrvates me to see the crawfish farmers playing the "buy local card" and then they buy imports

I don't know of Mercury or Ford having any plants here in Louisiana. I get what you're saying, but to me, it's more about the fact that we are in Louisiana, the home of crawfish, and yet people buy Chinese crawfish over our own product that is better suited to making etoufee with the fat, more tender, and fresher than anything Chinese, besides the obvious that it's ridiculous as hell to do such a thing.

I have not yet run across a business which sells crawfish tails, exclusively. They sell other seafoods, so I don't think NOT selling Chinese/foreign crawfish is going to result in a big loss of business. Chinese are plentiful in the grocery store chains, unfortunately, so customers can get them elsewhere,very easily.
I will not do business with local folks selling foreign crawfish, period. It's like a slap in the face to me. Business owners must make their own decisions. I may well be in the minority.
