I skip the sugar/simple syrup, and have replaced it with LaCroix.
I do the same, but use club soda and a Luxardo cherry.

I don't drink much spirits anymore but, my wife loves to experiment with cocktail making.
Here's one of her originals: Angel de la Muerte
This cocktail blends Sotol with mezcal for a smokey start. Meletti & Cynar add bitter-sweet herbal aromatics, and walnut & chocolate bitters provide nutty & cocoa notes.
Here's how to make it.
First assemble your mise en place, which includes a chilled coupe glass and ice in a mixing glass.
Add the following ingredients to build the drink in the mixing glass with ice.
Stir to blend the ingredients and allow it to rest to allow for dillution.
Dump the ice and water out of the coupe glass and strain the contents as you pour them in.
Garnish with a single marachino cherry & serve immediately
Cheer!

I've been experimenting with homemade limoncello made from my Meyer lemon bush. Last night was Fernet, bourbon and limoncello with dashes of bitters, Quite nice.

Beefeater gin, good size juicy lime triangle , Schweppes tonic and cubed ice. One of the few drinks that will quench your thirst and actually chemically cool you off and help with muscle cramps while mellowing you out after a long day. Not fancy and not alot of sugar.
