When I noticed Paul in the thread, I knew for sure I had gotten one.

I will never have a food board comment too innocuous for Paul to not GIT me.

I smoke the hock off pigs and deer I harvest. Heavy seasoning with slap ya momma and heavy smoke on the hocks.

Boil the hock by itself until the meat falls off. Cook trinity down, add peas, hock meat, and chicken/pork broth.

Enjoy with cornbread and some Tabasco Chipotle

Black Eye Pea Jambalaya

1# good smoked sausage, sliced thin and browned
1 can of undrained Trappey's black eye peas with jalapeno
i can of Campbell's beef broth, use it to wash out pea can
1-1.5 cups uncooked rice
1/2 stick of butter cut into pats
1 onion diced
1 bell pepper diced
1 small can of drained sliced mushrooms
3-4 stalks of green onion
3-4 cloves garlic
2-3 dashes of hot sauce
salt, pepper and red pepper to taste

Brown sausage, add everything to rice cooker and give it a stir, cover and cook. When cooked leave cover on rice pot and let it steam for 10-15 minutes.

I've also added left over diced grilled chicken or pork to rice cooker.

Good 1 pot supper with a salad or serve as a side dish.
