Anyone remember picantes in carencro? Loved their salsa. Longshot but anyone have a copycat recipe?

Fresh mango salsa
Start with diced ripe mango, diced green onion tops, diced cucumber, Lime juice, orange zest, orange juice, and black pepper.
Mix together and chill. I like it on Pork Tenderloin.

Picante was managed by Roberto Cervantes who currently owns Blue Apache in Lafayette (Southpark Village on Pinhook) and Youngsville (by Sports Complex). The jalapeño relish is the exact same as Picante, and I’m pretty sure the salsa is also the exact same recipe. The food at BA is the real deal

Was coming to post my tocayo recipe... but your recipe looks damn good!
Tip: if your tomatoes are more on the sweet side, you can add a charred tomatillo to your recipe to increase the acidity.

I don’t have measurements. I just eyeball it. I start with whole, peeled tomatoes in a can. I crush the tomatoes by hand then blend until smooth. I add a little garlic, diced red onions and peppers (jalapeño and/or serrano), and cilantro. Add salt to taste and that’s it.

I keep it simple and it's delicious. The best salsa is made with homegrown tomatoes. I grow them in my garden and that's what I use. Cut up tomatoes. Add chopped up purple onion, jalapeno's and cilantro to taste. Add salt and pepper and Tony's to taste. Done. Delicious. Homegrown tomatoes is the key ingredient when you can get them.

I use Alton Brown’s guacamole recipe with a couple of tweaks. It’s great.
