Filet/cook it just like you would a white trout. Frying and baking are both great options. I'm sure fish cakes would be fine as well.

Hell, I made an Indian curry with some the other week.

His dad was mostly right. Mullet, including ground mullet/whiting is great if eaten fresh. Don't know about Bonita. Would not fool with a hardhead, sail cat or chopique. Too many other good fish out there.

If you eat freshwater cats you'll enjoy Sailcats, only drawback is they are quite slimy. The meat yield is pretty good too.

I know in Florida lion fish is being pushed at some places. . I had tile fish at Disney, it was good.

When my guide buddy showed me how to clean Sheephead and Triggerfish a number of years ago, I changed my stance on them. Clean them backwards, from the tail forward to the rib cage, and don’t try to cut through the ribs. Flip him over and skin the fillet out. Pretty easy once you’ve practiced it. And Bay Snapper is some good eating.

No need to push Lionfish. It is great eating if you can get it.

I wonder how they do it in Florida. Check out this menu from a small strip mall restaurant down in Jupiter.
Corvina, Lane Snapper, Tripletail, Goldentile, and more.

Exactly! I’ve tried the restaurant a few times, never tried the spa, though.
