Leftover Prime Rib - what to make?

Thinking of doing cheesesteak sammiches with leftover prime rib.

Slice to 1/2-3/4”. Bring the meat to room temp. Blazing hot cast iron skillet. Oil. Sear about 30 seconds on each side.
Similar idea. Thinner sliced, little longer sear at lower temp. Make steak and eggs with sunny side up eggs- oh man!

Slice thin and set up a taco bar with pico, onions, peppers, some salsas, cheese, sour cream, guacamole etc etc

You have the right idea with the cheese steak.
At super one they sell a jalapeño cheese bread. Get it and then slice it into small slices. Butter it and then griddle it in cast iron to make Texas toast.
Chop the leftover prime rib into small bite size pieces. In a skillet, throw in an unhealthy amount of butter. Throw some jalapeños into the butter and then toss in your prime rib. After about 30 seconds, throw in a healthy grip of shredded cheese. Toss until melted and then pull the whole thing and plate on the Texas toast you made. The active cooking time in the skillet should be no more than 1 minute or else you will overlook your steak.
This is one of my guilty pleasures and I will cook an extra steak just to make this the next day. This is the basic recipe but I actually do a few other things to make it “mine”. I use hardcore carnivore amplify to finish the meat and I like to sear some onions in the butter. If I am feeling extra, I will put a little Borsin cheese or cream cheese on the Texas toast. Also, I like to use black truffle butter. Again, make it your own. You really can’t mess it up with steak, cheese, butter, and toast.

Last Father's Day I made a rib roast. We had roast beef sandwiches for a couple of days after but the real show stopper was the Chicago style Italian beef sandwiches we made out of the leftovers.
Slice it as this as possible (easier to do when it's cold), make a thin gravy (I used the drippings & better than bouillon) then reheat the beef in the gravy. Slap it on a hoagie, add sliced cheese and garnish with peppers, onions, and/or giardiniera.
