Try a 6-inch curved boning knife. $10-20 at any restaurant supply store. Buy a knife sharpener and start cutting.

Dexter Russell sof-grips are my favorite knives. Very comfortable to use for extended periods, doesn’t slip if your hands are wet, easy to sharpen and holds an edge well.

I just bought the 6" Victorinox linked earlier in the thread. I use it for deboning chicken, trimming brisket, etc. It's a great knife and I'm not sure why I didn't get one of these 15 years ago.

Agreed. I buy them by the case, either Victorinox or F Dick. Each knife is around $15 when bought by the case. Use a knife sharpener and a steel (knife sharpener sharpens, a steel keeps it sharp). When you feel they wear out, buy another one.
