Kitchen knife suggestions

Looking to upgrade my knife set. I had a cheap calphalon set with everything and I'm tired of the cheap feeling.

We got some good steak knives so I think we just need a chef, santaku, paring, and a couple others that are recommended.

Budget is 200. Used is not out of the question if that's a thing. Will up the budget if the jump is worth it.

I think I prefer Asian style but European is not out if the value is there.

They also have to look pretty good. I know about the victorinox fibrox and that's a no go because of the handles.

I’ve got a Global set and I love it but it’s a bit more than $200.

You can easily preform an autopsy with Victorinox Fibrox knives. Affordable and durable.

I have a full set of J.A. Henkels Pro-S knives. I like them, but I find myself using the Victorinox just as often.

Buy a Global chefs knife for about a hundred bucks then maybe one more. Then save for another. Just buy one good one at a time

. It’s what I do on all my kitchen stuff. I buy one LeCreuset or Staub at a time, save a bit and get another.

It's only a no go because if the way they look. WAF is a thing.

I was looking at getting a wustoff ikon 8" chef and a paring. I already have a sharpening steel from the old set, does it make a difference in brand for those? I also have some cutco shears.

If you like the Japanese style this is a good place to look. May have to come out a bit more than $200. Many of these are made in small shops in japan. Get on the forums and you can get some good info.

+1 for Chefknivestogo. If you want Japanese and something that is truly original, find what you like here. Also, pretty affordable options are readily available.

I'm intrigued by the Shun Classic with lifetime warranty and free sharpening.

I bought 5 shun classic knives with block and water stone sharpener. U won't need to buy another set ever again. Total was about 600$, but worth every penny. So with 200$, start off with the parer and chef knife then add to your collection with holiday gifts like christmas and birthdays.

Nothing wrong with Shun, it’s VG10 steel. But, if you want better steel and something made in a shop, not a massive factory then look at chefknivestogo. Hell, many of the knives are hand made by one guy in his blacksmith shop.

Mine has the kurochi finish and is a 210mm gyuto. It gets crazy sharp, think I paid $120. I will say this if you go this route you will have to budget some stones or one of the sharpening systems they sell. That’s why I only spent $120, so I could use it to practice and get good at stone sharpening.

I have a work sharp. Is that okay? I'm all for getting off the beaten path with brands but I want to know that if the stuff breaks, the company will back it.

I think the Shuns are VGMax which is a little better than VG10

I looked at chefknivestogo and liked the Takamura Migaki R2 Gyuto but like I said, I'm just not sure about warranties.

I think my worksharp only goes to 20 degrees per bevel so I think that is out on sharpening these.
