Kitchen Knife Set

Time for us to bite the bullet and add a good kitchen knife set... what’s everyone using that they would recommend? No unlimited budget but willing to invest $500/$800 for a set to last another 10 years. Have Henkel now

Honestly, for that price buy a good chefs knife/gyuto, a good slicing knife, pairing knife and you’ll be set for a long time. I prefer Japanese over German. Chefknivestogo.com is awesome

I have a set of Wusthof classics that I've had for about 15 years. They're good knives, but if I was in the market for new knives, I would probably get something Japanese, like Shun.

I think this is really good advice. You don't really need a lot of knives, so just get the essential knives and buy higher quality.

Yep, don’t waste your money on a set... buy 3-4 really good knives like the previous poster states

I use the Chef’s, Santoku, Filet, and Paring religiously. The bread knife is great when needed. These 5 are my essentials.

German for chopping and breaking down poultry. Japanese for slicing. Japanese knives will chip if used for chopping and breaking down a chicken.

I'm middle class and cheap, so I went Victorinox plus whetstone. I've had my chef Victorinox for over a decade and occasionally sharpen it and it works just like the day I got it.

What if I wanted to accomplish the same thing as OP for $100-150? What brands/knives would you recommend then? I like to cook, but I generally only get the chance to do it once or twice a week. I don’t need high end knives.

What makes you decide to reach for the chef knife instead of the santoku, and vice versa?

I use the santoku for veggies, not real sure why I’ve just always preferred it for chopping onions and what not.

The Santoku (I have Shun Elite too) is my workhorse. I have a Moritaka Gyuto but only use it if I’m prepping a lot of veggies at once for a big gumbo or something. I’ve got a $10 Rapala filet knife from Wal Mart with a wooden handle that has been great for me.

I’ve got other knives but those three are pretty much my main three and I could only have those three and be perfectly content.

Nowhere near the cook most on here are but I bought this set last year for around $160 and have been so happy with them. Just my 2 cents worth.

I picked up this Mercer Culinary boning knife last week for $15. Haven’t used it yet, but if I like it, I may pick up a few more singles from them.
