Kitchen Knife Recommendations (not a set). What's your favorite?

I'm looking for a good quality kitchen knife as a gift. Is there anything you use often, or couldn't live without? This could be any type of knife for any purpose.

Good question. Looking for something less than $50. That may be a dealbreaker, so maybe something small, like a good pairing knife.

Never underestimate a good cheese knife as a gift. My wife got one as a birthday present last year, we use the crap out of it. Cutco makes a good one.

Can't go wrong with a Wusthof 7" chef's knife or santoku knife. Staples of any kitchen.

Edit: Those would be around $100, so scratch that. A good paring knife would be good and around $50.

Victorinox. I use mine daily. You can get the knife and the cover for around $40.

Is the recipient a hardcore cook? Because the white plastic handled Dexter knives from any restaurant supply store will be appreciated.

On the other hand, they're utilitarian in appearance. If the recipient likes appearance as well as function, and has smallish hands, try Global: Japanese knives w/dimpled metal handles on the narrow side, thinner/lighter than many non-Japanese brands.

The plastic handled Henckels chef's knife I was given as a gift 25+ years ago is still going strong. Dropped it point down into a wooden floor & broke the tip....had it re-ground to put a blunt tip back on it. And yet it still survives.

Another good gift choice is a carbon-steel heavy chinese cleaver--it is surprisingly useful for smashing, bashing, hacking up chicken.

I have the Dojo Hayashi AS Nakiri I use it a lot and it's still just as sharp now as when I got it, best knife I've owned. But it was $75.00...$90.00 with the sharpening service.
They have a paring knife for $60.00 with the sharpening service that would be $75.00

IMO best bang for your buck is Global Chef's Knife. Can be found easily for under $150

My dad gave me an 8" chef and 6" boning knife propably 25 or so years ago. These 2 are my primary daily knives I use. Have others some higher priced some lower but these are my favorite.

Global Chef knife and Vegetable knife are my main go to's. I was gifted a Victorinox chef and pairing knife and they are a comparable, lightweight set, as well.

Dexter Russell white handles knives get my vote. I like the 7in fillet knife and the santoku.

I have this knife too and love it. Lightweight and ergonomic. Rada makes some good utility knives if you're just looking for reliable, inexpensive, easy to sharpen and stay sharp knives.

I use a Bob Kramer carbon steel blade knife...

I’ll never buy another chef’s knife

Edit: Since you’re looking cheaper, I’d hit Sur La Table & just grab a Henckel chef’s knife.
