I have been intrigued by kimchi since I've started my fementation obsession. I was planning on making a batch but finding the specialized ingredients proved a little difficult at Rouses. I did however stumble across this jar. I thought I'd buy it and try it to see if it was even worth making.

I ate half the jar in one sitting. Holy shite. It's like effervescent cabbage. Salty, umami, spicy, fricking sparkling cabbage. I wanna make gallons of this shite now.

I love kimchi, there's a brand they have been selling at Costco that is fantastic but GODDAMN does it give me gas.

I just ate it straight out the jar. The flavor is just so different than anything I've eaten. I couldn't stop.

I have seen recipes for kimchi fried rice, on grilled cheese sandwiches, on mac-n-cheese, on quesadillas, on french fries, or just as a side dish. You can also make a soup with it.

I ordered a bowl of kimchee to go with my fried chicken at Turntable Chicken Jazz in the Koreatown of NYC. The Korean-American bartender wasn't busy, and we were talking. He said that Koreans don't usually eat kimchee as a dish by itself (even though they had it on the menu that way; I guess for gringos like me). It tends to be an ingredient or component of other dishes.

I've seen it in fried rice type dishes, and that's good.

It also goes good with boudin.

Thanks for the replies.

I need to get me some. I've seen how to make it on youtube, but I think I'd rather try a premade one first. I would have no gauge on what it should taste like if I made it myself.

I love the stuff, my wife had a Korean student, his mother used to send me jars she made herself, I've never bought one as good. I've tried making it several times, never as good.

In what section is it at Costco? The best store bought I've found is at the Asian supermarket at Florida and Sherwood.

There is a Korean grocery on Lee Drive and a Chinese grocery on Perkins Road in the shopping center by Fresh Pickins that have kimchi. May be closer to get to than the stores on Florida/Sherwood area, depending on where in BR you live.

Kimchi fried rice, add thia chili roasted brussels sprouts and fresh basil, mint and cilantro. Add shrimp or pork to make it a main dish.

Kimchi is typically served with rice. We tend to put it in things like lettuce wraps and on chicken and dumplings.

The Kimchi that Costco carries is about as good as it gets. Unless you got your family making it fresh. Fresh crisp Kimchi is top tier food.

Sprouts has really good kimchi. It's way in the back, next to the milk, with other fermented items.
There's a local person who makes kimchi that they sell at Red Stick Spice and Whole Foods. It's good, but price is high as giraffe pussy.

What are you have difficulty finding? I usually skip the daikon. Dried shrimp is hard to locate but fish sauce works. I get Korean pepper flakes at WholeFoods.

Fresh Pickins on Coursey usually has the diakons, I don't think I've ever had it with Asian pears.
