Keto Friendly Chicken Thighs

Normally, I would just post pictures on this tomorrow, but I'm really excited about this recipe. I took some chicken thighs and made a marinade of fresh ground tumeric, fresh ground ginger, red wine vinegar, garlic, cumin, oregano, olive oil, coconut aminos, red pepper flakes, smoked paprika, and salt/pepper. The marinade has a really nice orangish/red color and smells great.

I am currently marinating it and will grill it tomorrow. This is a very healthy marinade, with the fresh ginger and tumeric, coconut aminos (soy sauce substitute), and other ingredients. The smell is amazing. It should turn out good, if I don't screw it up on the grill...

I plan on putting a sauce of cilantro, jalapeno, garlic, and yogurt. on top.

I'm excited to try this, and will post pictures tomorrow. This has the potential to be healthy and have fantastic flavor.

Does your oven have a decent broiler? I often broil marinated boneless skinless thighs for weeknight meals. Hard to screw up, even for a novice. As long as you do them on a rack or broiler pan that drains, you get a nice crispy result.

What are the benefits of coconut aminos over soy sauce? Less salt? Ive heard of this ingredient but have never used it. What am I missing out on?

I don't know. My first time using it. Less salt, a little sweeter, is my understanding. Supposedly has health benefits of coconut. It's soy, wheat, and gluten free.

Bruh, chicken thighs slap. I’ll typically rotate every other week between a one pan stir fry or pesto

Interesting. I normally just throw the thighs on the grill straight from the package with a little salt and pepper turns out great.

I do thighs pretty often on the egg. They are great and like others have said are hard to screw up.

Looking forward to your pics of the finished product.

Ready to go on the grill. These are boneless/skinless, so I'm trying to maximize the flavor. I marinated them overnight, so they should be pretty tender at about 170. I may make a glaze out of some of the marinade ingredients plus lime juice and a little honey.

Chicken is done. It turned out great. It wasn't as spicy as I would have liked it, but it was very tasty. Fresh grated ginger and tumeric root was a good combination. I would probably add some Sriracha next time for a bit more heat.

ETA: the key with chicken thighs, is to let it spend a few minutes over direct flame to get a kettle color and crust, before finishing it over direct, medium heat, IMO.
