Justin Wilson cookbook - whuddya rec?

I once watched Justin make a gumbo and it was the weirdest method I've ever seen. He left out part of the trinity or something - can't recall exactly what it was, but it was strange.
That said, I have a copy of Justin Wilson's Outdoor Cooking With Inside Help that's pretty good.

I have had these two for many years and like them. Recipes are not very complex.

You’re correct. He used to call green peppers “taste killers” and recommended using them sparingly. I have the same cookbook, btw. It seemed like the older he got, the more wine he used.

Watching Justin Wilson takes me back to my grandfathers living room as a kid. He loved to watch his show and I can remember him laughing at him every time he pulled out the wine. Now I’m gonna be watching Justin Wilson YouTube videos all night.

True. I flipped through one in a tourist gift shop, and the recipes were extremely stripped down and simple. Suitable for a kid or beginner cook.

Random JW story that I may have told before... : 1985: on a work-trip to Nanjing, China. I opened my wallet for some reason, and my hosts starting pointing and saying "rehsuspena". Took me a moment to realize they spotted my Louisiana driver's license, and were saying "Red Suspenders".
Yep, I spent the rest of the trip saying "I Gar-On-Tee" with an accent as fake as Justin's, to much amusement of the locals.

And on just about every episode he'd do the "Ah need jus one teaspoon of salt" and pour some from the box of salt into his palm, then transfer that to a measuring spoon to show it was 1 tsp. worth.
He was definitely no Paul Prudhomme or John Folse, but his recipes were simple enough for the average cook to make a meal out of.
