Jambalaya HELP!!!!

Ok Tigers, this Aggie needs some serious help. Last year I attended a LSU football game with some friends of mine (and I had a ball I might add! Thanks for the hospitality!). The tailgate party I attended had this large "jambalaya cooker" that they were cooking for the masses in. I have aquired the use of one of these contraptions to use at an upcoming party here in Texas. The problem...The guy loaned me his cooker, but refused to loan me his recipe. I'm told the one I have is a 10 gallon pot. I have never made jambalaya that didn't come from a Zatarain's box. I would greatly appreciate a good recipe and any tips that you can give on how to cook in one of these contraptions. Also, I need to make about 200 servings for the party. Any idea how many you can serve with each batch from a 10 gallon cooker?

You might want to start on a much smaller pot your first go round, cooking jambalaya is much more about technique than recipe, it takes many pots to get it right, I would not want 200 hungry people waiting for my first jambalaya pot, maybe do pastalaya your first time it is much more forgiving

You have the best two links on the site for cooking a large quantity of jambalaya.

Cooking it for the first time for 200 people is risky when you haven't done it before other than from a box. It can be done, though. Study Stadium Rat's chart and good luck.

While I'll probably be berated, chastised, besmirched, and generally made fun of for suggesting this, I'd recommend you use parboiled rice for your first attempt in a pot this size. As mentioned above, it takes experience to get a jambalaya right, especially one that size.

You're going to make two batches and if you have 200 hungry people, you're going to run short. I'd explore side options. Making a 3rd batch would be quite time consuming.

Thanks for all of the help and great suggestions. That calculator is amazing, and the photographs on the recipe thread will definately come in handy. I will definately make several trial runs before the event. I am picking up the cooker this weekend, and the party is over a month away, so I have time to play with it. I think I will start off making a batch or 2 on the stove and then a few half batchs in the cooker before I go all out. I'm starting early because I figured It would take some time to perfect. My wife and neighbors may be sick of eating jambalaya by the time I'm done with this. I'm not too worried about the timing involved with having to make multiple batches at the party, because not everyone will be eating at once, it is sort of a trickle in and out event. Thanks again for the help! I may come back with more questions once I start my trial runs!

For God sakes, find the jambalaya calculator and follow it closely and you can't go wrong!

I have less than 5 years of experience cooking, much less jambalaya. I got my first rig for Christmas last year and I followed the calculator and I nailed it. My first jambalaya ever I was hearing best jambalaya they ever eaten compliments from people at a new years party.

The jambalaya calculator is SICK! Stadium rat and all that contributed did a hell of a job.

You will have a hard time feeding 200 from a 10 gallon pot..
I have a hard time feeding 100 from a 15 gallon.

Rat did a great job on the calculator. I wish I had it 20 years ago..

The calculator addresses how many total pounds of meat to buy. I plan on using pork butt, chicken theighs, and smoked sausage. Should they be equal amounts each, or more of some than others? Thanks

You can mix it up to your desire. I personally prefer more sausage than anything. I usually get a decent size Boston butt, and fill the rest with sausage. Not a fan of chicken, but that's just me.
