For anyone thinking about jerk chicken this weekend, local groceries are having outrageous sales on hind quarters, which is ideal for jerk. I saw a ten pound bag yesterday for under three bucks.
I'm also an advocate of Walkerswood. I like to follow this recipe. Walkerswood jerk seasoning is the real deal and I can only find it locally at World Market. It's also available on Amazon too. Check it out if you're at all into jerk.

I bought a few types of jerk sauce and seasoning in Negril and I tend to like Walkerswood just as much as that. A mixture of white and dark meat is best and always serve with a mango salsa.
