I made this one earlier today too and it should be done in 30 minutes. Got some cornbread in the oven now.

I think it may be next to impossible to add too much onion.

I generally double whatever the recipe calls for.

I added leftover beef rib meat I cubed up. For me, it was the star of the show.

Everyone in Lafayette must be eating chili on Halloween night. Ran to Albertsons yesterday after work and the chili aisle was a madhouse. They were almost sold out of chili packs and dark kidney beans.

Thanks for sharing. I made this chili tonight, and it was also the best chili I've ever made. I can't wait to make it again. Huge hit.

I don't do beans in chili, so that part was left out. I also had to add about 1/2 cup or so of chicken stock since my ingredients weren't liquidy (I did the "chili fixins" Rotel which doesn't have a lot of liquid like regular cans of diced tomatoes) -- but otherwise followed it exact. Even crumbled up my bacon really tiny and folded it in before the simmer.

we made a pork green chili last night with hominy and butternut/delicata squash and it was amazing

topped in the bowl with crema, radish, pumpkin seeds and red onion. Definitely one of our better efforts

side note: ideal market is the shite. If they don’t have what you need for chili you don’t need it

Here is mine that is usually never the same twice, but this is the gist of it.

Brown 4 lbs of hamburger a diced onion, jalapeno, and bell pepper. Then drain and add some minced garlic.

Add a 15 ounce can of crushed tomatoes, can of rotel, two beers. Then I usually take some dried chilis and put them in a blender with some beef broth and make a slurry and add that. Add beans during this step if that is your thing.

Salt, black pepper and chili powder to taste and then a tablespoon of cumin and cinnamon with a few bay leaves and an ounce of unsweetened chocolate get added to the pot.

Let simmer for a few hours and serve in a bowl with shredded cheddar cheese, a dollop of sour cream and fresh cilantro and green onions.

Emeril's Kicken Chili Recipe is damn good as well.

Depends, if I just want a bowl of chili, I prefer with some black beans, but not a ton. If I want it as a condiment over a hot dog or on a fritos pie, then no beans. I wouldn't kick either out of bed though.

I don't know why I'm so anti beans in chili when I actually enjoy beans on their own. I guess I feel like it "interrupts" the chili

It's a texture thing with me, I believe. If there's beans, I will try my hardest to eat around them even though I like beans otherwise. I think describing the beans as "interrupting" the chili is a good way to put it!

I grew up on El Chico ground beef chili. Smooth and I loved it with cheese melted in it and sour cream. No chunks of anything. Old school chili I guess. To this day, I don't want chili with chunky meats in it. I know to many that's blasphemous, but that's the way it is in my world.

I’m okay with putting beans in but they usually end up getting mostly mashed and whipped around so its not the hard whole bean effect.
