chuck-eye steaks are still underrated and a good value imo.

Absolutely, but they have gone up in price too.

It's my go-to cut for jerky.
I slice it thin with the grain. For marinade, it's usually whatever I have in the fridge - soy sauce, liquid smoke, worcestershire, teriyaki...pretty much whatever I have that I'm low on and I want to get rid of goes into a container with the strips. The only constant ingredient I use is sambal oelek.
I use the marinade feature on the Food Saver a few times to pull it all in and let it sit overnight.
Then on the dehydrator for 10 hours at 160 (though I don't know if it actually runs at 160).
I wouldn't say it'll win any competitions, but I like it. And with the high prices on even shitty store-bought jerky, I come out a mile ahead in terms of price.
Personally, I like to take a piece and peel off a long strip. Then I gnaw on it like a toothpick while responding to emails or staring at spreadsheets at work.

No it's not.
Flap meat and "shoulder london broil" aka flat iron are extremely underrated. Chuck eye is still the premier underrated steak.

I do love a flat iron steak, too. Used to get them for next to nothing. Now I see they’re just as much as flank.

Do tell. Pre-packaged or something they do in-store?

Get a flank or skirt weekly. Whole Food usually has one of them on sale every week.
Whole foods skirt with the chimichurri marinade makes awesome tacos.

Even better if you can find outside skirt. Inside is what I usually see in regular grocery stores.
