In need of a good cornbread recipe

Anyone have a tried and true cornbread recipe? Jiffy box is not what I am looking for anymore.

The best will be with stoneground meal. That said, this works pretty dang good.

Preheat oven to 425

Mix together:

1 cup self rising corn meal
3 T oil or bacon grease
1 large egg
Whole milk or buttermilk, enough until the mix thickly pours from the mixing spoon.

Preheat a cast iron skillet, 8 inch, on the stove top. Oil or Pam when hot. Pour in the mix and pop in the oven.

Cook until golden on top...around 20 minutes on a middle rack.

Otis thanks! I agree about jiffy. That is why I am moving on to scratch made.

Your opinion which combined with a dollar would buy you a cup of gas station coffee. I'll Stick with the box while you make an inferior cornbread just to be able to say you made it from scratch.

I grew up on scratchmade cornbread made in cast iron molds. The one that made sticks shaped vaguely like ears of corn was the best.

I feed my family Jiffy now.

I just add half a cup of S/R Cornmeal to a box of Jiffy to cut the sweetness some. I think it tastes just fine.

If you find stone ground meal, add 1 t salt and 1/2 t baking powder to the egg, oil, and 1 cup of meal. Use the milk/buttermilk and add until the mix thickly pours from a spoon. It'll be a better product than the self rising mix, IMHO.

My wife and I use the Pioneer Woman recipe. Always turns out great -- even the times I've made it drunk. Don't skimp, use real buttermilk.

1 cup Yellow Cornmeal
1/2 cup All-purpose Flour
1 teaspoon Salt
1 Tablespoon Baking Powder
1 cup Buttermilk
1/2 cup Milk
1 whole Egg
1/2 teaspoon Baking Soda
1/4 cup Shortening
2 Tablespoons Shortening
INSTRUCTIONS
Preheat oven to 450 degrees.

Combine cornmeal, flour, salt, and baking powder in a bowl. Stir together.

Measure the buttermilk and milk in a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir.

Pour the milk mixture into the dry ingredients. Stir with a fork until combined.

In a small bowl, melt 1/4 shortening. Slowly add melted shortening to the batter, stirring until just combined. In an iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet. Spread to even out the surface. (Batter should sizzle.)

Cook on stovetop for 1 minute, then bake for 20 to 25 minutes or until golden brown.

Edges should be crispy!

I've been using this recipe for the last couple years and comes out great.

Ingredients

2 tablespoons of bacon drippings...you can use lard but the B.D's taste better
1&1/2 cups coarse or medium grind corn meal
!/2 cup all purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 lrg. egg lightly beaten
1&1/2 cups of well-shaken buttermilk

mix cormeal,flour,salt, BP &BS
mix egg and buttermilk only until blended.
IN a preheated oven add bacon dripping to 7/8" cast iron skillet..... let it get hot
Mix all other ingredients and poor into HOT skillet.
Bake at 450 for 25 min. remove and let set for several mins. before serving.

Look in the recipie book above for Delane’s Cornbread.... made n cast iron skillet w yellow corn meal, salt, bacon grease, etc

No Sugar. Ever.

Here it is - simple and fantastic


2 cups Cornmeal
1 cup Flour
2 Eggs
2 cups Buttermilk
2 tsp Salt
2 Tbs Baking Powder
1/2 tsp Baking Soda
½ cup Bacon Drippings

Procedure
Melt Bacon Drippings in Cast Iron Skillet, get skillet hot…….Wipe Around Edges…….Mix Other Ingredients & Pour Into Skillet………….Bake at 425 for 15-20 Minutes, until top is brown and edges are crispy.

This one is easy and killer:

2 boxes of Jiffy mix
1 can or cream style corn
8 oz of sour cream
3 eggs
1 stick of butter

Mix all together and let sit for about 20-30 mins. Bake at 350-375 for 30-40 mins.

It’s killer! You can add jalapeños to it if you want. It’s moist as hell.

Best post here. Cracklin cornbread was my grandfathers favorite and mine as well. Can use crumbled bacon as well.

I like Otis’s recipe. I find Jiffy too sweet.
