Smothered chicken and gravy over rice with peas and corn bread on the side. I also have to throw a honorable mention to her chicken and dumplings.

Mom made a mean chicken pot pie, but my gran was the shite! Her red eye gravy and home ground grits would send you taste buds into obit at breakfast. Never was able to reproduce it...something about the bacon grease in the can and the old coffee grinds I never mastered.

Meatloaf with mashed potatoes, fried cabbage, and corn bread.

Fried pork chops or fried veal cutlets with baked macaroni and cheese.
Later in life (up until a few years ago), she made a fantastic homemade pizza, especially her BBQ chicken. Perfect crust.

Beef stroganoff
Supli (similar to arancine, made with chicken livers)

Those grandmas used bacon grease in lots of stuff and it was always so damn good.
Mine would even put some grease in her fresh green beans

When she deferred and let my grandma, her mother cook. That old lady could lay down some serious chow.
My mother is in her 80's now and STILL can't make a roux.

Oh lord. Every meal I have to suffer through that my mom cooks seems to get worse over the years. She severely over seasons everything with natures seasoning and garlic salt. It’s unreal. My dad and I make faces at each other just to try to get through it without saying something negative. Bless her heart.

Do you have any older siblings? Ask them, they might have a favorite she made before she croaked and you can pretend it’s your’s. You know, so you can participate in the thread.

Mother didn’t hardly cook, daddy was the cook.
However the 2 I remember most were her Shake & Bake porkchops and Mrs Paul’s fish sticks..

My absolute favorite is her roast, rice and gravy, and roasted carrots with brown sugar. I still ask her to make that when my wife and I visit
Honorable mention has to be her stuffed manicotti with meat sauce. My grandmother was Italian and we both get our love of pasta from her. That woman could throw down in the kitchen.

Now my mother always kept a box of these and it’s how we got our first microwave. My hippie brother came home stoned about 2am turned the oven on 500 degrees tossed the fish sticks...cardboard box and all mind you into the oven and promptly went to bed. Around 4am the fire department paid a visit to the house with one very pissed off father. The next day a family meeting occurred in which an Amana Microwave which was as big as a washing machine was presented along with a speech that said “any of you come in stoned or drunk again and use anything other than this microwave in the middle of the night better have your shite packed by dawn.”
My brother got stoned and promptly put a frozen chicken pot pie with the aluminum pie plate in it and a few days later we had our second microwave.
Maybe I should have saved that story for Father’s Day.

Y’all were advanced! I never had used a microwave until my oldest son was born. Those 2am boiling water feedings were killing me..
If my mother had a microwave, I wouldn’t have ever tasted the gourmet meal of Shake & Bake.

Well as good of a cook as she was she wasn’t opposed to a bit of convenience from time to time, so I also grew up with a healthy dose of Hamburger Helper. And I do remember on occasion that beautiful roasted chicken served with a side of Stove Top Stuffing.

Yep that accompanied the Mrs Paul’s fish sticks and the salmon croquettes..

She didn’t make salmon croquettes but she would peel the bone out of the canned salmon and make it with mayonnaise like tuna fish and that was one of those sandwiches she was proud of.
