Imitation crab, hear me out

I am planning on making a seafood gumbo this weekend after seeing GeauxldMember's thread last week. I have a dozen crabs frozen from an old boil, but it made me think. I hate the way imitation crab taste, but what about in a gumbo? Does it soak up the gumbo flavor and work out, or does it stay shitty?

If you don't like it outside of gumbo, I think it would be wise to leave it out. I'd eat that stuff right out of the package, though

It won't absorb. Surimi is weird.. very processed.
The texture will seem stiff..

I'm not dogging the idea or the product.. everything has it's place.

Cant say that I eat it package to mouth. I don't care for it on a salad either. I am sure I have eaten my fair share of imitation crab cakes though.

That is what I was worried about. Looks like I get to cough up a bit more for this gumbo.

The only way to use it, is to grind it up for a thickener in gumbo.

I love the spicy kani/crab salad.

Cucumbers cut in matchsticks, shredded immitation krab, spicy sauce concoction, and small roe.

So good.

Has anybody tried canned crab meat?

This is my first real attempt at a seafood gumbo. Normally I do everything the same as my chicken and sausage, but just swap chicken for shrimp.

Reason I ask, I don't mind buying a lb or two for a small gumbo. However, if I like how this gumbo turns out, I like to make 5-6 gallons worth so I can freeze it.

I'd freeze the gumbo then put fresh crab in when you defrost and use it...just make without for now.

I don't freeze seafood gumbo with the seafood in it. I freeze the gumbo sans any seafood and add fresh when I defrost and reheat. Otherwise, the seafood is overcooked.

I don't care for canned crab. If I'm going to do the work for a good seafood gumbo, I'll have fresh seafood. I'm good with shrimp gumbo without crab if the crab is unavailable. Very tasty.

4.875 lbs. of "special" canned crab meat for $75

Special grade crab meat consists of smallish flakes of white crabmeat taken from the body cavity. It's best for dishes where good color and delicate flavor are more important than visual impact. Excellent for dips, bisques, omelets, and mayo-based salads.

Easy decision. 1-2 fresh crab meat from Rouses. Small gumbo only.

just use claw meat...it's almost always available even if frozen.
canned or faux crab have uses but not in gumbo
