If you had two pounds of peeled shrimp, what would you make?

Trying to figure out something to cook that is relatively healthy, I need the fdb's help.

I like to keep it simple. Melt some butter and throw in some garlic. Then toss in the shrimp until pink.

I would add a little lemon, and green onion. Rice pilaf and asparagus.

Easy thing to do:
marinate the shrimp in some olive oil, cajun seasoning, ground thyme, ground paprika, lemon juice, minced garlic for about an hour. Broil the shrimp on a cookie sheet for 5-7 minutes....
toast some poboy bread and cheese and make a poboy... lettuce, tomato, maybe add some remoulade sauce or aioli

Two shrimp poboys, I guess you can use light mayo to make them healthy.
