If you could master one cuisine, what would it be, French, Italian, Greek, Chinese, etc?

I’m not talking the “best chef ever” in the cuisine, but make some simply amazing meals, what would it be?
I think I’d go with French (even though I love Italian). I’m talking baking, desserts, sauces, etc.

I love all of those cuisines, but Greek/Mediterranean is the one I could eat every single day and never get tired of it, so I'm going Greek.

French if I’m cooking for me. The stews, sauces and flavors are more my style. I also share their love of cheese and butter.

Used to work with an Italian guy. He said the French were eating like the British until Catherine de Medici brought an Italian chef to the French court.

One of the stipulations she had for marrying Henry of Orlèons was that she demanded to bring her cooks and food culture with her.
Florence (where she's from) already had an elaborate food culture in the 16th century.
Some of this may be a bit of but, the points are all valid. Fact check it.
