iconic or quintessential summer dishes/recipes ...

i think of fresh, ripe tomatoes during summer, so i really enjoy blts ... nice, freshly baked white bread from the deli and vine ripened tomatoes from a local place ... pairs extremely well with a gin/tonic ...

also think of peach cobbler since alabama/georgia have so many places to buy fresh peaches right off the tree ...

Tomatoes and cucumbers with a little oil and salt and a lot of cracked black pepper

Tomato bacon cheddar pie

I make this all summer long. The key is to put sliced tomatos on a rack and sprinkle salt on them. Let site for an hour to remove the water so the pie isn't soupy.

My wife has her wooden White Mountain ice cream maker going on the patio right now so her vanilla bean ice cream is also my summer treat.

And tomorrow I will pick a dozen or so ears of fresh corn, shuck, simmer in water until just warmed through, butter, salt and pepper.

Sweet ice tea. Fresh butter beans and what the hell else do you need?

Warm potato salad

Summer salad with some kind of light dressing and fruit mixed in.

Put a good basil pesto on a plate, put this over top, little fresh mozzarella, salt and pepper. Let it sit a few minutes until the tomato and watermelon water mixes with the pesto. My goodness I love that.

Sounds good to me! Those tomato and watermelon juices with the pesto will be tasty.
