I just saw a post by one of my former competitors. It reminded me that I miss those challenges.

Howd that work? Give everyone a random list of ingredients and then go off who had the best looking dish?

Pretty much. And the person with the best camera wins.

So it could be undercooked and under seasoned, but throw some fresh garnish on top and break out the DSLR camera and you have a winner. Sounds like a good time.

Darla would be kicking yawl's asses every month. She can photograph a dog turd and make it look scrumptious.

Raging Blaze, or something like that, smoked everybody in just about all of them. He threw down some badass looking food and had himself a helluva camera.

The food was not delicious in the one I placed highest in. But it was purty. (I don't have the best camera. I use my iPhone.)

Pretty sure most of my pics were using an iPhone 4 or a Canon powershot compact camera (then $100 used on Ebay) ; nothing real special. I remember these challenges from back in early 2014. If I had to guess why I won several of the food challenges, I'll attribute 25% to plating, and 75% by thinking outside the box. I also really enjoy cooking and creating new food ideas thru improvisation.

These 4 main ingredients were: avocado, tangerine, tuna, and jumbo pasta shells. I created a tuna ceviche mixed with tangerine and cilantro. Spooned into a deep fried pasta shell that was crunchy. Garnished plate with jalapeno and pepper jelly. (iphone 4 pic)

This one was probably my most favorite and unique. 4 main ingredients: ribeye, fruit cocktail in a can, cucumber, and wasabi edamame. Thinly sliced the ribeye for beef carpaccio. Puree'd the fruit cocktail then dehydrated it to make a thin dried fruit roll-up sheet. Made some sushi rice with and without tobiko, added a sprinkle of black sesame seeds. Layered it in a sushi box press, garnished with green onions and tobiko. Cucumber was thinly sliced and pickled in ponzu sauce. Messed up with the wasabi edamame as I finely crushed it using a molcajete ... still don't know why I did that. (pic from Powershot)

balls - pretty sure I've been in your neck of the woods lately ... Bastrop, Rayville, Mer Rouge, Jones, and Funroe. I enjoy my travels to N LA as they have some beautiful big woods, and the occasional dead black bear "trash bag" along the side of I-20

You were all up in my neck of the woods. Next time you get up this way and have some time we need to get a beer and let you cook me something.

If anyone wants to start it back up go for it. I don't have the time for it but it should be easy and there seems to be a few that want to do it.
