P.S. If you didn't get pre-rinsed, I read that you need to run water over it to rinse well for about 15 minutes. Something about a foul taste if you don't. I bought the pre-rinsed, so I didn't have to do it.

i like to cook it with chicken broth instead of water, then add a bit of either basil pesto or sun-dried tomato pesto after all the liquid is absorbed.

A friend of mine used some seafood stock to cook it. You could cook shrimp in it or toss them in it when it's cooked. It's more versatile than I would have expected.

I occasionally make a chicken & andouille quinoalaya. It's actually quite tasty.

A liitle less actually...65g to 85g. But a chunk of the quinoa crabs are fiber which doesn't act like a sugar carb. And the quinoa carbs seem to not raise blood sugar the way processed (rice-pasta) carbs do.

I'm at work in California, I might can find some magnum Quinoa out here to bring home.

I make it the same as jambalaya, except I don't brown the quinoa like I do rice. Just brown the chicken and andouille, add trinity and saute til clear, add the water/stock and quinoa, cover and simmer til done.

An tart offtake of a traditional Med tabbouleh(bulgar wheat, mint, onion, tomato, etc..)..
Toasted Almond Citrus Salad
Eat this light dish as a healthy lunch, a hearty side or pair it with a side salad or broiled veggies for a nutritious, light dinner.
1 tablespoon lemon juice
1 tablespoon cold-pressed olive oil
2 tablespoons chopped fresh tarragon
1/4 cup chopped fresh parsley
2 oranges, peeled
1/4 cup toasted, slivered almonds (with skin if possible)
2 1/2 cups cooked quinoa, cold or room temperature (read the basics of cooking quinoa)
Salt and freshly ground pepper to taste
1. Whisk together the lemon juice, oil, tarragon and parsley in a serving bowl large enough to hold all the ingredients.
2. Section the oranges and cut each section into thirds. Stir the oranges and any juices into the bowl.
3. Add the remaining ingredients and mix well.
4. Add salt and pepper to taste. Serve chilled or at room temperature.
