How I Made Pulled Pork at 225

Smoked a butt this weekend and wanted to share for anyone interested. It's the first time I ran the smoker at 225. Usually I run it 250 or higher due to the time it takes to smoke.
225 - 2 hours per pound
250 - 90 minutes per pound
275 - 60 minutes per pound
I had a 10 pound butt and it took 22 hours from start to finish. Began smoking at 6:00 pm. Pulled it off the smoker at 11:00 pm, wrapped in butcher paper, and used my electric smoker (no wood chips, just heat only) to let it cook while I slept. The end internal temp was 200.
It was the most tender pulled pork I have cooked. It's tender at a 250 cook, but it seemed to be a step further in tenderness at this 225 cook.
The only thing I would change would be to add a couple more hours to the smoking step (before wrapping). It could have used more smoke flavor but I stopped it when I was ready to go to sleep.
Rub:
1/2 cup brown sugar
1/2 cup salt
1/4 cup granulated garlic
1/4 cup paprika
1/4 cup chili powder
1/4 cup black pepper
1 tablespoon mustard powder
1 tablespoon oregano
Homemade BBQ Sauce (approximate measurements)
3 parts ketchup
2 parts brown sugar
2 parts apple cider vinegar
1/2 part cane syrup
bbq rub
Served on a toasted bun with coleslaw, pickles, onions, and sauce.

I always cook mine at 225. Only time I'll raise it is after I wrap it if I want to finish it off quicker.

I ate at an old now closed bbq drive up some years ago. They smoked their onions and they were so good on the sandwiches. They were in some sort of oil, it seemed. Not much, though.

I don’t DV but I roll at 250 until IT 205, no wrap any pork. I feel like pulling the pork is a bit easier at 205.
Pic makes it look a little dry but could be just the pic. Hard to dry out a butt .

Looks good to me
Here’s one I did last week till it hit 170 on 225. Then put it to 250 till it hit 203. Pretty much the same rub but no chili powder

I was actually surprised that it was still juicy. It wasn’t dry at all. That’s why I wanted to wrap it, to make sure it wouldn’t dry. I was worried about the 22 hours, but at 225, that’s what it takes. The 22 hours had no effect on drying it.

is a waste of time and fuel to me. But you paid for it so do like you want. I smoke mine at 275, usually unwrapped. I also cut it in half (almost) then rotate it and cut it almost all the way through again...basically making 4 quadrants if you will...with the fat cap and ~1/2" meat holding the whole thing together.
That does two things: it creates more surface area to get rub on which equals more bark...the thing that everybody loves in pulled pork. And it obviously shortens the cook time dramatically.
Sandwich looks just fine to me.

So what is the purpose of the varied temperatures instead of rolling at one? I think 225 is too low for a butt and unnecessary. Ribs can roll at 225 but I still do 250 with them too.

22 hours for that dry shite? I could cook it for 4 to 5 hours between the Egg and Oven and get a lot better result. You do you though.

You’re wasting time and money running it that long.
I always bring mine for a few days before and it helps with the juiciness.

Not really wasting time and money or fuel. Smoked for 5 hours on my stick burner Saturday night and then put it in the electric smoker (just heat). Pulled it off Sunday for dinner. Didn’t have to touch it for 17 hours in the electric smoker. I checked the electric smoker maybe 3 times just to make sure it was still on.
I understand if you think that’s a long time, but that’s what it takes at 225. I’m not suggesting you need to do it at 225, just giving a report of my results.
If it would have been an 8 pound butt, it would have taken 16 hours, which is perfectly normal for pulled pork. It was a large butt. Over 10 pounds.

It was one temperature, 225 the whole time. I listed those other temps just to show how long it takes at those temperatures. To compare it to how long it takes at 225. The point was to show the time needed at each temperature.

I over slept a few weeks ago and needed pulled pork "in a hurry" and rolled at 350. I honestly think it came out better than my last cook this past weekend at 225. The 225 time just takes SO LONG for the pork to go from cooked to pulling temp. I think next time I am going for the 350 cook again.
